Spanish Rice Pronto!
Ingredients
- 2 Tbsp olive oil
- 1 medium onion, diced
- 1/2 medium bell pepper, diced
- 1 can (8 oz.) tomato sauce
- 2 cups Minute White Rice
- 1 cup water
- 1 tsp salt
- 1 tsp mustard powder (optional)
- fresh cilantro, chopped (optional)
- lime wedges (optional)
Instructions
- Heat oil in a saucepan over medium heat.
- Add onion and green pepper. Cook, stirring, for 3-5 minutes, or until beginning to soften.
- Add rice, tomato sauce, water, salt, pepper and mustard powder, if using. Stir to combine, and bring to a boil.
- Cover and simmer for 5 minutes.
