Citrus and Ginger Roasted Broccoli
Ingredients
- 1 head(s) uncooked broccoli, large, cut into large florets with some stem
- 1 Tbsp olive oil, extra virgin
- 1 Tbsp low sodium soy sauce
- 2 tsp orange juice
- 2 tsp orange zest
- 1 1/2 tsp ginger root, fresh, minced
- 1 1/2 tsp minced garlic
Instructions
- Preheat oven to 450° F. Line a large baking sheet with parchment paper (or coat pan with cooking spray).
- Toss broccoli with oil; spread on prepared pan in an even layer. Roast, stirring once halfway through, until lightly browned, about 20 to 25 minutes.
- While broccoli roasts, in a small bowl, whisk together soy sauce, orange juice, orange zest, ginger and garlic.
- Immediately drizzle cooked broccoli with orange mixture and serve.
Notes
Yields about 1 cup broccoli per serving.
